Make a Cake for Easter

Cherry & Wine Cake    (Contributed by Shubha Mathew)
  1. 100 Gms Nutrilite Butter( Soft ) 
  2. ¾ cup Sugar (Powdered) 
  3. 1 cup Wheat flour (sieved)
  4. 2 eggs (keep it 30 minutes outta d refrigator)
  5. 1 tsp Baking powder (keep it 30 minutes outta d refrigator)
  6. Pinch of Salt 
  7. 1 tsp Mixed spice
  8. 1 cup of chopped cherries soaked in wine for a fortnight  
For the Icing: (Optional)    
  1. 75 gms nutrilite butter
  2. 4-6 tbsp powdered sugar
  3. Handful of sliced cherries
  • Chop the glazed cherries and soak in wine for a fortnight
  • Sieve the wheat, salt,& baking powder thrice.
  • In a bowl mix butter and sugar till creamy.
  • Add in egg one by one and mix well for 3-4 minutes till airy.
  • Add mixed spice and beat for 1 min
  • Add the sieved wheat mixture simultaneously with the cherries soaked in wine, starting & ending with the wheat mixture
  • Grease the mould with butter and then sprinkle wheat flour and dust off the extra
  • Preheat oven at 200 degree for 5 mins and bake cake for 40 minutes at 180 degree

Enjoy hot yummy cake  

For the icing, just cream the butter and icing sugar and sliced cherries.
or else bake it as cup cakes & once cool decorate the cake with icing and top it cherry too!
